The Best Zucchini Bread!

This recipe for zucchini bread is the best one I have ever tried!!

image3 1/4 c. all-purpose flour

1 1/2 tsp. salt

1 tsp. ground nutmeg

2 tsp. baking soda

1 tsp. ground cinnamon

3 c. sugar

1 c. vegetable oil

4 eggs, beaten

1/3 c. water

2 c. grated zucchini

1 tsp. lemon juice

***Preheat oven to 350***

In a large bowl, combine the flour, salt, nutmeg, baking soda, cinnamon and sugar.  In a separate bowl, combine oil, eggs, water, zucchini and lemon juice.  Mix the wet ingredients into dry;stir well. Bake in 2 standard loaf pans, sprayed with nonstick spray for 1 hour, or until a tester comes out clean.

You can also bake this in 5 mini loaf pans for about 45 minutes.
